  • PLANTAIN TACOS + THE BEST EVER SALSA

These tacos are such a joy. I wanted to create a fruity taco shell without any nuts and seeds. Here it is: raw plantain tacos 🎉

Plantain tacos
3 ripe plantain
1 tbsp psyllium husk powder
1/2 cup water

Mix the ingredients in a food processor until smooth.

Create 9-10 tacos (about 1/4 cup per taco). Don’t spread the batter too thin, about 1/4”/0,5 cm thick, on silicon sheets.

Let them dehydrate for about 8-10 hours at 115 F/46 C.

You don’t need to flip the tacos. They are ready when you can fairly easily peel them off the silicon sheet. 

Salsa
8.8 oz/250 g tasty tomatoes
2 shallots
1/2 tbsp cumin
1 tbsp green salt
1/4 cup cilantro, packed
1/2 green rawit pepper
2 tbsp lime juice
2 garlic cloves
1 tsp chili pepper flakes

Blend the ingredients in a high-speed blender until saucy. A true salsa isn’t chunky (that’s picco de gallo and taste very different than salsa).

This salsa recipe is my favorite. It’s just so so good. I hope you’ll enjoy it too!

  • MANGO CHIA PUDDING WITH PASSION FRUIT AND BLUEBERRIES 💕

You not just want to eat healthily, you also want to make sure you’re feeding your cells with the needed macro- and micronutrients.

And you know what? It’s so easy to hit the perfect numbers on a high raw fruit and plant food lifestyle. Need some extra iron? Add 2 tbsp of chia seeds to your smoothie or make a chia pudding (recipe below!). Add some delicious Medjool dates to your smoothie, wraps, or simply just eat them as they are. Tahin and pumpkin seeds are great sources too.

Mango chia pudding with passion fruit and blueberries

1 large juicy mango
2 tbsp chia seeds
1 passion fruit
4.5 oz/125 g blueberries

Blend the mango in a high-speed blender until smooth.

Mix the chia seeds with the mango in a jar and place in the fridge overnight. 

Top your mango chia pudding with passion fruit and blueberries.

  • One of the best things is that you can batch create raw wraps and then keep them in the fridge for 2-3 weeks easily. I roll them and then store them in an airtight container or a ziplock bag. 

Wraps are easy to make and bring along. It’s the perfect salad in disguise. Wraps satiate and taste o so good!

  • Do you love bagels but don’t like to eat sticky gluten ones? I hear you. No worries, you can enjoy delicious gut-nourishing bagels too!

I love to use sprouted buckwheat in my bagels. Buckwheat is healthy and good for your gut. 

Sprouting buckwheat is easy but you need to make sure to use fresh buckwheat kernels. When using old buckwheat kernels they won’t sprout well and it will turn into a smelly mess.

Rinse the buckwheat kernels thoroughly. Then soak the buckwheat kernels overnight (about 8 hours). Again, rinse thoroughly and then either put the kernels in a sprouting jar or colander. Rinse the buckwheat once in the morning and once at the end of the day. In 1-2 days your buckwheat sprouts are done and ready to be used to create scrumptious bagels.
